2 hours | 4 people

INGREDIENTS:

  • 1 ½ kg octopus
  • ½ cup sweet red wine
  • 1 tomato
  • 1 cup olive oil
  • 10 small onions
  • 1 tablespoon sugar
  • ½ cup brandy
  • ½ balsamic vinegar
  • 1 bay leaf
  • 5 spice grains
  • 1 tablespoon thyme honey
  • Pepper

Method:

Peel the onions and score vertically and horizontally. Wash the octopus and chop in smaller pieces. Heat the oil and cook the onions on low heat until they are soft. Sprinkle with sugar.

Add the octopus and stir until its colour changes. Add the brandy, wine and balsamic vinegar, let simmer and add the grated tomato, spices and a good dose of pepper. Let it simmer over low heat for one and a half hour, until the octopus becomes soft and the sauce thickens. Finally, add some honey and stir.
