INGREDIENTS:
- 2 tablespoons olive oil
- 200g halloumi, cut in 4 slices
- 2 tablespoons olive oil
- 700g mixed salad [lettuce, rocket, spinach etc.]
- ½ cup sundried tomatoes (from jar) [drained and cut in two]
- 1 tablespoon honey
- 1 tablespoon black sesame
Method:
For the vinaigrette: In a small bowl, use a fork to mix the olive oil, balsamic vinegar, honey, salt and pepper until fully combined. Add finely chopped fresh mint and mix again.
In a large non-stick pan, heat the olive oil. Once ready, fry the halloumi slices for approximately 2 minutes on each side, until golden brown. Let them drain on oil-absorbing paper.
Add some sundried tomatoes in your salad and sprinkle with black sesame. Finally, add the vinaigrette salad dressing.
